When the plan doesn't go as planned...

Sometimes the plan does not go as planned.  This has been my life the last several days.  I just can't seem to get on a blogging schedule this month.  And it's just going to get worse since I only have 3 more days until vacation!  Woo Hoo! 

The last time we chatted, I had Crockpot Cheeseburger Soup simmering away.  I must say that I thought it was just a delicious this time as I did the first time I made it, but unfortunately the kids would not even try it.  I don't know what is wrong with them.  I'm certain that if I could have gotten a bite past their stubborn lips, that they would have enjoyed the cheesy goodness just as much as I did.  But, alas...  My lovely in-laws stayed for dinner and both expressed delight in the meal.  That being said, I am going to call this recipe a win as well. 

Saturday was practically a holiday for me.  I had to work during the day, but I had the house to myself for the entire evening!  To myself!  All by myself!  As in there was not another living soul in my home until 10:30 when hubby got home from work.  No one screaming.  No one clinging to my leg as I tried to pee.  No one!  It was bliss!  Bliss, I tell you!!!  I spent the first half hour just trying to decide what I was going to do with this rare evening to myself.  Clean?  Read a book in peace?  Take a nice quiet bath?  Watch a movie that wasn't animated?  Go to bed at 6pm?  The possibilities were endless!  In the end, I did a little computer work, set a timer for 45 minutes and tackled a corner of the overly cluttered bedroom, watched a little TV while I ate dinner, took a nice, hot soak in the tub (while reading a book in peace), and turned in around 8pm after a good night chat with my muchkins on the phone.  Who says you can't have it all?  It's a good thing I got a chance to refresh a little on Saturday, because I sure needed it to deal with Sunday.  What was for dinner, you ask?  Teriyaki Chicken.  I don't have a link or a recipe for this one because it literally consisted of just putting frozen chicken in the crock pot and pouring a little teriyaki sauce over it.  Easy peasy!  It was pretty tasty as well.  I will probably make it again.  Next time I will make some fried rice to go with it.  Since it was just me at home, I didn't bother on Saturday.  But it was still yummy.  It will go into the "save" pile.

Sunday night was a busy, traumatic one in our household.  It started out innocent enough, with Crockpot Chicken and Noodles.  I very much enjoyed this recipe.  With a little coaxing, A actually ate it! He kept telling me it was yummy and even tried to convince his sister to try it.  But she was having none of it.  I am still putting this in the WIN pile.  It was a bit bland, next time I will add a little onion to the chicken to see if that will liven it up a tad.  Of course, Austin probably won't like it then.  After dinner, little E had two seizures, one of which was way worse than her "normal" seizures.  I have a call in to the neurologist to see if we can figure out what's up with that.  Then after we put her to bed, A and I were making soft pretzels for an after work snack for daddy.  When I pulled the pretzels out of the oven, I knocked the thermometer that hangs off the oven rack down.  So with the pan in one hand, I picked the thermometer up and tossed it up onto the stove.  I turned around to put the pan on the cooling rack and A apparently picked up the thermometer.  His scream was awful!  The oven was set on 475 degrees, so he burned his poor little hand pretty badly.  Luckily, Kevin gets off early on Sundays and was already on his way home.  We determined that an ER visit wasn't warranted, but A spent two solid hours crying.  It was very late for all of us by the time we got him calmed down and asleep.  Then I had a good cry before I went to bed.  My heart just hurt for him so bad!  And of course there is all the mama guilt.  If only I had set it further back on the oven.  Or made sure to tell him how hot it was.  He's usually so good about staying away from the oven.  It's E that I've worried about doing something like this.  He seemed much better yesterday, but his hand looks awful.  Luckily, I was off work since I worked the weekend.  So we packed up and off to the doctor we went.  We didn't even get anything into the crock pot before we left.  For shame!  Sometimes you just have to roll with the punches, you know?  The doctor gave us a prescription for burn cream and bandaged his hand up real good (which he was NOT happy about) and told us that when the blisters pop we will have to bring him back in to have it debrided.  That's just a fancy word for cutting out all the dead skin.  Ick!  It makes my stomach flip just thinking about it!!!  I am not looking forward to that part.  I wish that I could take it from him.  But all I can do is hold him while he cries and pray, pray, pray.  If you're the praying type, we could really use some extra ones in the coming days.  Thanks!

So like I already said, we didn't manage to get a crock pot meal going yesterday, but we are back on track today.  I'm really looking forward to dinner tonight.  This is a recipe I have made several times before and I love it.  Crock pot Chicken Fajitas! Again, I don't have a link or a recipe.  Your just cut up your peppers and onions, put them in the bottom of your crock pot with your chicken on top.  Then pour a packet of fajita seasoning on top of the chicken and turn it on low.  The chicken makes a lot of its own liquid.  When I get home, I take the chicken out and shred it, adding as much of the juice back as I think it needs.  I keep the peppers and onions separate because they're not liked by all in my household.  Gather up the other fajita fixings - cheese, sour cream, beans, rice, tortillas - and dinner is done!  It is so good, even the kids eat it!  Usually...  We will see how it goes tonight.

Happy Friday!

Happy Friday to those of you who don't work in a hospital and have the weekend off.  Unfortunately, I am not one of those people.  But I'm not going to let working the weekend get me down.  I only have 6 more days of work before my vacation!!!  Woo Hoo!!!

I'm sorry that I haven't posted in a few days.  I know you are all anxiously awaiting my review of the Pepper Steak from Monday.  Wow, I can't believe I haven't posted all week!  Hmmm...  I guess I've been pretty busy this week.  Who knew?  Anyways, so the Pepper Steak was ok.  It was a little salty for my taste and Kevin didn't like the tomatoes.  Of course the children wouldn't even let a little piece pass their lips.  Those stinkers!  And like the macaroni and cheese, we really didn't think this was any easier or any tastier than a similar recipe I make without using the crock pot.  So after some discussion at the dinner table, Kevin and I decided to put this in the "not again" pile.  Kind of disappointing.

Ok, so that covered Monday.  Now on to Tuesday.  Tuesday night we had Easy Crockpot Beef and Potato Meal.  It was super easy to pour together in the crock pot and cooked for a nice 6-8 hours.  But unfortunately, it was very bland.  We had to add salt and cheese to it to make it palatable.  And even then the hash browns were really mushy, almost more like mashed potatoes.  It wasn't awful, but it wasn't great, either.  And, of course, neither of my children would eat it.  I hate to say it, but I had to put this one in the "not again" pile as well.  I'm starting to get a little discouraged about all the things I'm discarding.

Even with taking leftovers for lunches every day, we were still being overrun by them, so we decided to eat leftovers for dinner on Wednesday.  And then my husband very thoughtfully got rid of the rest of the leftovers by accidentally forgetting them at my mother's house.  But I guess I can't complain too much since he did spend his entire day fixing my mother's broken pipes.  Thanks, honey.  You are the best!  Thursday night we had a much needed date/game night with our friends.  We ate junk food and played games and chatted till much past my bedtime.  We had a blast!  I didn't even regret it when my alarm went off at 4:30 this morning.  Although I did hit snooze 4 or 5 times.  I made a delicious brownie batter dip and some homemade graham crackers for dessert.  I have never made graham crackers before, but they were relatively simple, and delicious!  The people I work with were making fun of  me for making graham crackers until I brought the leftovers in today and they tasted them!  Then they were asking me for the recipe!  :)  I know these aren't crock pot recipes, but just in case any of you are wondering, here are the recipes for the Brownie Batter Dip and Homemade Graham Crackers.  You should try them out, they are amazing together!  This summer I am planning to try my hand at homemade marshmallows as well and make my own homemade s'mores!  Who wants to come try them out with me?

We are still plugging away at the yogurt.  I've been taking it for breakfast at work, and I must agree with the children.  It is yummy!  I am hoping to make some homemade granola this weekend to go along with it.  I've been making homemade granola bars for a couple of years now, but this will be my first go at granola.  

My very helpful husband put our dinner in the crock pot for me this morning, since I was running a tad late for work.  He chose Crockpot Cheeseburger Soup.  This is one of the few recipes for this month that we have made before.  I found this awesome website, A Year of Slow Cooking a while back.  She has a ton of crock pot recipes on there.  I thought this looked like something that my children would eat.  Potatoes, hamburger, and Velveeta - What's not to love??  My children actually weren't here the one other time I have made this recipe, but the hubs and I really enjoyed it.  We will see how the littles react to it  

Speaking of, I should probably get off here and get some work done on this house before my wonderful father-in-law brings the little tornadoes home.  I hope you all have a wonderful weekend!  We are actually supposed to be getting some warmer weather, so I'm hoping the kids can go outside and run a little of their crazy off.  Thanks for stopping by!

The March of the Crock Pot

Welcome to day 3 of the March of the Crock Pot!  Things have been going along swimmingly around here if you don't count the large amount of winter precipitation that we received over the weekend and that it is now looking like my hubby may have to have surgery.   But if we can overlook those two insignificant details, and focus on the Crock Pot March, then everything is going great!  

Last night we had Beans and Rice.  They were very easy to put together, although they do require a little more forethought as the beans have to be soaked overnight.  This recipe also takes the longest to cook out of any of the ones that I have planned for this month.  It has to cook for 10-12 hours.  And even though you just throw them in the crock pot and let them cook, I will tell you that this was not an easy time for me.  I usually use crock pot meals on days that I am going to be at work all day.  I come home and not only is dinner done, but the house smells amazing!  Win, win!  Well, the one exception would be when you are actually home all day.  These beans smelled amazing from the time that I put them into the crock pot!  The cilantro and rotel... Yum! It was torture smelling that for 10 hours and not being able to taste it.  By the time it was finally done, I think I was completely out of saliva from salivating all day long.  And I was so excited to try it that I completely forgot to take a picture of it.  Oops!  I guess I'm not used to this whole blogging thing yet.  You'll just have to take my word on it, I suppose.  Or better yet, click this link Beans and Rice and try it yourself!  I topped mine with just a little cheese, Kevin used cheese, sour cream, and hot sauce.  The kiddos wouldn't even try it.  Oh well, more for me!  :)  I am definitely putting this recipe into my dinner rotation.  Easy, cheap, and delicious!!!

There is already one unforeseen draw back to my March of the Crock Pot.  It is only day 3 and I am already out of tupperware.  My fridge is full of delicious left-overs all ready for work lunches, but I don't have any to put tonight's in.  First world problems, I know.  I guess I will be picking up some new tupperware on my way home from work tomorrow.  It would probably also help if I could get a certain someone to bring home the ones from their work...

An update on my crock pot yogurt.  Unfortunately, it did not thicken up in the fridge like I hoped that it would.  But that does not seem to deter my kids at all.  This morning they ate it without granola and seemed perfectly content to slurp it (very loudly) through a straw.  They have already gone through nearly a third of the batch in three days.  I think I will be making this recipe again.  I need something nutritious and cheap to feed my picky kiddos.  This yogurt fits the bill.  High in protein and high in fat content needed to get a little meat on my skinny kids bones (oh, if only I had that problem!).

Hello again!

Hello!  I can't believe that it is already the first day of March!  Where did February go???  I think it flew by in a whirlwind of party preparations and baking.  E turned 2 on the 19th and her party was the 23rd.  And I was out of commission for three days just prior to her party with a nasty case of vertigo.  Trust me, that stuff is nothing to mess with.  I wouldn't wish it on my worst enemy.  Ok, maybe my worst enemy, but not just any plain old, ordinary enemy.  :)  Anyways...  Onto the reason for my post.

I really enjoyed the challenge of the no spend month in January.  I discovered that I respond really well to a challenge issued, even if I am the one that issued it.  So last week as I was making up a meal plan and came up with a challenge for myself in March.  Every time I use my crock pot to cook dinner I think, "Man, I really love this thing!  I should use it every day!" But I never did.  The problem was that I only knew about 4 recipes for my crock pot and even though I love those meals, we really don't want to eat them every night.   So I decided to increase my crock pot repertoire by finding a new recipe to try every night for the month of March.  I am calling it "The March of the Crock Pot"!!!  Catchy, huh?  Then began the online search for easy, kid-friendly crock pot meals.  Thank goodness for my awesome meal planning site Plan to Eat.  Seriously, you guys should check this site out, it is amazing!  You get a "Save Recipe" button for your browser (like a Pinterest "Pin It" button).  When you find a recipe that you like, you just hit the Save Recipe button and it automatically uploads that recipe to your recipe book on the Plan to Eat website.  Automatically!  And then when you want to do your meal plan you can just drag the recipe that you want to the day that you want to make it and BAM, meal plan made!  It has seriously changed my life!!  I love Pinterest, but I almost never got around to making recipes that I pinned on there, but now that I can put it right into the recipe book that I use to do my meal planning, I am trying new recipes left and right!  And then when it's time to go grocery shopping the site automatically makes my shopping list for me too!  Life changing, I tell you!  Check it out.  Plan to Eat  But, I digress...  

I am so excited about this March challenge.  In fact, I was so excited that I couldn't even wait for March to start it, so I started last night!  I made my own yogurt in the crock pot.  It was so easy and so much cheaper than buying it at the store.  It does take a while but most of the time is completely hands off.  Now, I did not plan my time very well (I blame it on my excitement), and I had to set an alarm to get up at 12:30am to add the yogurt cultures, but other than that, the recipe was super easy.  Anyone can do it!  Aunt Tammie, I am talking to you!  Since I got almost all of my recipes online, I am just going to post the links (since my brilliant Aunt Tammie taught me how to do that today!) to where I got my recipes.  This is the recipe that I loosely followed for my yogurt.  Foolproof Greek Crockpot Yogurt  My thermometer wouldn't work, so I had to find a recipe that did things more based on time rather than temperature, but it still worked out perfectly!  
Here is what it looked like in my crock pot before I put it in the fridge (Aunt Tammie also taught me how to put in pictures!).  My kiddos couldn't even wait for it to get cold before trying it out.  And since they licked their bowls clean, I call it a success!  It is unsweetened, so I just added a little honey and a sprinkle of granola and the kids loved it.   It is a lot thinner than the greek yogurt I have gotten used to eating, I am hoping that it thickens up a bit in the fridge, but it is still very good.  I am also planning on using some of the unsweetened yogurt as a replacement for sour cream in some of my recipes.  So exciting!

And then for dinner tonight we tried Crockpot Mac and Cheese.  It cooked a little faster than I anticipated, so it got a little burned around the edges, but it was still tasty.  It only took me about 10 minutes to mix it all into the crock pot and then get it going.  The temperature had to be adjusted about 45 minutes into the cooking and it only took about 4 hours till it was done, so it is not a recipe for a work day.  But it was still nice to just be able to dish it up at dinner time and be done with it.  

Neither one of my children would even put a bite in their mouth and try it.  Why are my kids so weird?? What child doesn't like macaroni and cheese???  That being said, I think I will put this recipe into the "Probably not again" pile.  Even though it was good, it wasn't really any easier or tastier than making a homemade mac and cheese the old fashioned way.  So I think I will just stick to that.  But it was still nice to try.
